鉄が大地の中からとりだされるようになって、いったいどれぐらいの時が流れただろう。

この有益で力づよい素材は、さまざまなところで人間のいとなみを明日に繋げていく。

炉の中で炎が赤々と燃えたぎり、その中で鉄の塊がみるみる色を変えていく。
「パン、パン、パン」次の瞬間、真っ赤になった鉄は、金床の上に取り出され、職人のうち降ろす金槌で何回も何回もたたかれる。「トン、トン、パーン、トン、トン、パーン」同じことが幾度も繰り返され、鉄は形を変えていく。職人は、炉の中に空気を送り込み、火を煽り立て、鉄を沸かして魂を打ち込む。庖丁は、きわめて荒々しい環境の中で鍛え上げられる。

 

 

In spite of advances in modern-day technology, the techniques used in making kitchen knives today have hardly changed since ancient times when Japanese swords were made. These knives have inherited time-honored techniques perfected several centuries ago. Today, just as then, only a craftsmanユs dexterity can be relied upon.

高度な技術革新の続く中、庖丁づくりのテクノロジーは、かつて刀を造っていたころと大きく変わってはいない。何百年も前に完成の領域に達した技術を足すこともなく、引くこともなく受け継いできた。今も昔も、職人のからだに染み込んだ所作だけが頼りの世界。火造り、銑、ならし、すり回し、銘、焼入れ。一連の作業の中で火と水の力を借りて一本の庖丁は仕上がる。

 

 

 

Through the processes of forging, preparation of the pig iron, conditioning of the metal, grinding and polishing, inscribing and quenchingムthe strengths of the fire and water are borrowed to produce the finished knife.

厳しく鍛え上げられた鉄は、寸法が採られ、細かい部分にヤスリが掛けられる。そして、表面をさらに固い鋼で削られ化粧が施される。こうして変成の歪を整えられて、銘が刻まれる。その後、泥が塗られ儀式に臨む。
焼入れは、庖丁が誕生する瞬間。この時、真っ赤に焼けた鉄は水の力によって道具としての切れ味を手にいれる。

 

 

 

Once the iron has been thoroughly tempered, its dimensions are measured, and its details are filed down. Its surface is then planed with even harder steel to produce a shiny finish.

「ズー、ハー、ズー、ハー」職人は、鞴を使って炭をおこし、焼入れの炎をつくり上げる。「ズー、ハー、ズー、ハー」。引いて炭をいこして、押して鉄を赤くする。普通、焼入れのときの鉄の色は、お彼岸の中日の夕日の色というが、その日その日の気温への対応は、職人の勘そのものでしかない。
焼入れは一瞬の出来事。炉の上には神が祭られている。

 


In this way, the knife is finished to perfection, ready for inscribing. It is then coated with mud in preparation for a ceremonyムquenching, the moment of birth. When plunged red-hot into water, the strength of water gives the knife its sharpness as a tool.

焼入れのあと、真っ赤に焼けた鉄はぴたりと静謐さをきわだたせる。人間の力が及ばないところで鉄は庖丁に生まれ変わる。自然の力によって切れ味を内包した庖丁を、じっと見つめると、呼吸が整い気持ちが安定する。内に秘められた作り手のエネルギーが伝わってくる。手に持ってみると自分の内面に秘めた可能性が引き出され、気持ちが高揚し元気が湧く。

 

 

 

 

After it is quenched, the glowing red-hot iron gives off an aura of tranquillity. In this way, iron becomes a knife beyond the strength of man.

炎の力と職人の腕で鍛えられた庖丁には、それぞれに個性がみてとれる。鍛えられた時間がそのまま顔となって現われる。この顔は、十数年使い込んでもほとんど変わることはない。しっかりと研ぎ上げれば、何年たっても誕生した瞬間と同じように、ハガネがギラリと輝く。職人が一本、一本「気」を込めて打ち上げた庖丁には、そんな力が秘められている。

一人の職人が一日につくり出す庖丁の数は、多くても十数本。決して効率的ではない。しかし、人間が「気」を入れてつくった道具は、使い易く、長持ちする。使い手と造り手が顔を合せて重ねてきた対話がしっかりと道具の中に生かされているからだ。力のかかるところは分厚く、固く。先は薄く、バランス良く。人間の手技は、そんなあたりまえのことをあたりまえに実現する。職人の手によって、十分に鍛えられた「道具」は、使い手の期待を裏切らない。そして、道具としての価値を引き出してくれる使い手のもとで食材の「うまさ」を創造する。

 

Making knives is far from an efficient professionムa craftsman can make only about 15 or 16 knives at the most in a single day. However, the tools that a craftsman devotes his innermost energy to are long-lasting and easy-to-use.
This is because the close communication of a knifeユs user and its maker have been firmly brought to life in that knife.
